GRANOLA, ON TOP OF A MOUNTAIN

woke up and watched the sun rise eating granola w pumpkin seeds, flax seeds, puffed rice, and oats.. with dried banana chips and milk.. great start

incredible breakfast, like a calzone kinda.. crispy dough made from flour and lard stuffed with beef, beans, and lots of nm green chiles.. toped w cheese and a red chile sauce

BREAKFAST ALA NITAS..

breakfast ala nitas is created by pouring hot coffee over instant oatmeal, letting it cool over nite then consuming it upon awakening the next morning.. its become a necessity to start our day..

TOMMYS FAMOUS HAMBURGERS, LUBBOCK TX

these were really good burgers.. ran by mexicanos the bun was like a torta bun and well toasted inside and out.. the meat is 'ground fresh daily' and since we didnt have a car to sit in we just posted up on the curb.. after a 70 mile day i thoroughly enjoyed these at $1.30 a pop

not the chain.. a little convenient store/bbq joint with a building next door of equal size with a huge 'smoker.. we heard about this place for about 180 miles and it was really good.. the people werent very nice but i guess i wouldnt expect them to be at a serious bbq spot

ROCK INN CAFE, SEYMOUR TEXAS

debbie and husband gerald own this 70yr old cafe in seymour tx.. it's voted top ten in texas which is a state that takes its cafes very seriously..




cowboy benedict: buiscuts, ham, eggs, gravy, with hashbrowns... awesome







and the coconut cream pie came out warm and was about a foot tall!
